Gyokuro from Yame, also know as Jade Dew, is produced by shading the tea bushes for approximately 3 weeks prior to picking. As a result, this protects the bushes from sunlight which increases the chlorophyll content of the tea leaf and prevents theanine, a factor in sweetness, from being changed to tannin, a factor in bitterness. Gyokuro has a rich green color and sweet taste.
